1. Heat large skillet over medium to high heat, add vegetable oil.
2. Add chicken, onion, garlic, season with salt and pepper to taste. Cook for 4 minutes. Stir frequently.
3. Add broccoli and cheese, cauliflower and chicken broth. Add cover and cook for 6 minutes. Stir frequently.
4. Add cream cheese and stir. Cook for 1 minutes.
5. Remove from heat, add cheddar cheese. Place lid back on skillet and wait 1 minute.
6. Stir before serving.
