1. Preheat grill to medium heat.
2. Season chops, as desired.
3. Wrap pineapple chunks in a foil pouch with butter and a dash of salt.
4. Grill chops and pineapple pouch for 20-25 minutes, turning over, halfway through cooking time.
5. Place rice on serving platter. Top with chops, pineapple and remaining ingredients as desired.
