Chicken, Sweet Potato and Corn Sauté

From the freezer to the stovetop to the dinner table, this warm dinner salad – packed with robust flavors of grilled chicken, roasted sweet potatoes and sweet corn – comes together quickly. 



1. Preheat 1 Tbsp olive oil in large skillet on medium heat.

2. Add chicken, cover and cook 5 minutes.

3. Remove chicken from pan and set aside on plate.

4. Add remaining 1 Tbsp olive oil to skillet.

5. Stir in sweet potatoes and corn. Sauté for 7 to 10 minutes, stirring occasionally, until browned.

6. Toss fresh spinach into skillet and sauté for an additional minute until spinach has softened.

7. Add chicken from plate into skillet.

8. Season with salt and pepper, to taste, and serve.
