Cod with Roasted Potatoes, Broccoli & Cauliflower

There is a lot to enjoy about this one-pan meal of crispy-coated, wild-caught cod; roasted potatoes; and gently steamed vegetables, including the easy cleanup.


1.  Preheat oven to 450°F.

2.  Arrange cod and bakers in single layer on foil-lined baking sheet lightly sprayed with cooking oil.

3.  Bake on center rack for 12 minutes.

4.  Turn fish and bakers over. Bake additional 11 to 12 minutes or until fish is golden brown and crispy.

5.  Prepare vegetables according to package instructions and season to taste.

6.  Garnish with lemon wedges and serve.
