Roasting vegetables in a hot oven is a chef-inspired way to kick-start the process of browning and caramelization, and it gives broccoli a surprising, nutty sweetness. Take broccoli a delicious step further and top it with shaved Parmesan.


  • 2 Tbsp
    extra virgin olive oil
  • 2 Tbsp
    fresh lemon juice
  • Salt and pepper, to taste
  • 1 tsp
    lemon zest
  • ½ cup
    shaved Parmesan cheese


1. Preheat oven to 425°F. Lightly spray a rimmed baking sheet with cooking oil.

2. Place broccoli on baking sheet.

3. Drizzle with olive oil, lemon juice and season with salt and pepper.

4. Roast 20-25 minutes, or until crispy-tender and tips of florets are light browned.

5. Garnish with lemon zest and Parmesan cheese and serve.

Tip: It’s easy to create Parmesan shavings – use a simple potato peeler to slice ribbons from the long side of a chunk of Parmesan cheese.
