Ingredients

  • 1 cup
    colored bell peppers, stemmed and diced
  • 1
    red onion, peeled and sliced into 8 wedges
  • 4
    garlic cloves, chopped
  • Salt and pepper, to taste
  • 5 Tbsp
    extra virgin olive oil
  • ½ cup
    slivered almonds, toasted
  • ½ cup
    shaved or shredded Parmesan cheese
  • 2 Tbsp
    chopped fresh parsley (optional)

Instructions

1. Preheat oven to 425°F.

2. Toss together California blend, peppers, onions and garlic with olive oil, salt and pepper.

3. Place mixture on foil lined baking sheet and roast for 25 minutes.

4. Place vegetables on serving platter and top with lemon zest, toasted nuts, Parmesan and parsley.
