This sweet and savory salad pairs beautifully with fire-grilled chicken. Makes a tasty brown-bag lunch - simply pack ingredients separately and assemble.

Ingredients

  • 1/3 cup
    extra virgin olive oil
  • 2 Tbsp
    champagne vinegar or white wine vinegar
  • 2 Tbsp
    fresh lemon, juiced
  • 2 Tbsp
    honey
  • 6 cups
    mixed salad greens
  • 1/4 cup
    almonds or nut trail mix
  • 1/2 cup
    crumbled goat cheese
  • 1
    green apple, diced
  • 1
    shallot(s), minced
  • Lemon vinaigrette
  • Salad
  • salt and pepper, to taste

Instructions

1. Whisk first six ingredients together for a dressing.

2. Toss ¼ cup dressing with greens and apple.

3. Top with almonds or trail mix, blueberries, cheese and chicken. Serve remaining dressing on side.
