Hickory Smoked Bacon & Corn Pudding

Traditional Southern corn casserole gets a flavorful boost in this variation, with hickory-smoked bacon.



1. Preheat oven to 350 degrees.

2. Prepare bacon in skillet until crisp. Remove bacon, set aside and discard drippings.

3. Sauté onions and peppers in butter 3 minutes.

4. Puree 2 cups of corn, half-and-half, salt and pepper in blender until smooth.

5. Blend in eggs, sugar, and cayenne.

6. Butter an 8-by-12-inch baking dish. Add remaining corn and bacon-pepper mixture into dish.

7. Top with cheese and pour egg mixture over top.

8. Bake 40 minutes or until a toothpick inserted in center comes out clean.
