1. Sauté onions in olive oil 2-3 over medium high heat.
2. Blend the remaining pulled pork topping ingredients with onion mixture.
3. Bring to a boil, reduce heat and simmer 15-20 minutes.
4. Mix together pico de gallo ingredients.
5. Place 1/3 of chips onto a platter, top with 1/3 of bean mixture, cheese, pico and guacamole.
6. Repeat layering with remaining ingredients and serve
