grill to medium.
2. Sprinkle salt, pepper and thyme onto each side of the pork chops.
3. Preheat a large cast iron skillet (or heavy stainless steel skillet) on grill.
4. Add 2 tablespoons of butter and melt.
5. Place chops into pan and close the lid.
6. Cook each side of chop until golden brown about 8-10 minutes per side.
7. Remove chops from pan and set aside.
8. Deglaze pan with a little wine or broth and a touch of butter and serve as a sauce.
