Tex Mex Chicken Fajita, Queso, and Rice Soup

Classic Tex Mex flavors of queso, grilled fajita chicken and rice are combined for a simply delicious soup.



  • 1 pkg
    Chicken and Queso Skillet Meal (431), frozen
  • 4 cups
    chicken broth
  • 2 Tbsp
  • 2 Tbsp
    corn starch
  • 1 cup
    shredded Mexican-style cheese
  • fresh lime, juiced
  • 1 cup
    tortilla strips
  • 1/2 cup
    sour cream
  • fresh cilantro, chopped


1. Add chicken, vegetables, rice and chicken broth together into a medium pot.

2. Bring mixture to a boil, reduce heat to low.

3. Combine water and cornstarch together and stir into soup. Cook an additional 3 minutes.

4. Stir in shredded cheese and queso packet. Continue to cook an additional 5 minutes.

5. Serve with fresh lime juice, tortilla strips, sour cream and cilantro.

Tip: Try adding minced jalapenos to add depth and extra heat to soup.
