Tex Mex Chicken Fajita, Queso, and Rice Soup

Classic home-style Tex Mex flavors of queso, grilled fajita chicken and rice are combined for a simply delicious soup.



1. Add chicken, broth, rice, beans, corn and tomatoes together into a medium pot.

2. Bring mixture to a boil, reduce heat to low. Simmer 10 minutes.

3. Combine water and cornstarch together and stir into soup. Cook an additional 3 minutes.

4. Stir in queso. Continue to cook an additional 3-5 minutes.

5. Serve with fresh lime juice, tortilla strips, sour cream and cilantro.

Tip: Try adding minced jalapenos to add depth and extra heat to soup.
