Prepare these crowd pleasing bite-size pieces filled with grilled fajita chicken, Spanish rice and queso cheese sauce for your next gathering.



1. Preheat oven to 350°
2. Trim corners off wonton wrappers and place into a mini muffin tins.
3. Spray lightly with cooking oil and bake 5 minutes or until lightly brown.
4. Spoon skillet mixture into wonton wrappers.
5. Top with cheese and bake 8-10 minutes or until cheese is melted.
6. Garnish with queso, sour cream and cilantro.

Tip: For a fun twist substitute corn muffins with wonton wrappers. Blend muffin mixture together according to package directions. Fill mini tins with 1/3 full of muffin batter, top with skillet mixture and cheese then bake 15-17 minutes. Garnish and serve.
