Cornbread Tamale Muffins with Jalapeño, Cheese and Bacon

Instructions

1. Preheat oven to 400ºF. Line muffin tins with paper liners.

2. Prepare corn bread batter according to package direction.

3. Spoon 2 Tbsp of batter into muffin cups.

4. Combine cream cheese, jalapeno and ½ cup cheddar cheese together.

5. Divide cream cheese mixture over muffin batter.

6. Top cups with a tamale pieces and remaining muffin batter.

7. Garnish with remaining cheese and bacon. Bake 15 - 20 minutes or until set
