1. Sauté bacon in large skillet over medium heat until crisp.
2. Stir in potatoes, peppers and onions, jalapeno, and seasonings.
3. Cook 10-15 minutes or until the potatoes and peppers are heated through.
4. Top with prepared eggs, garnish with parsley and serve.
Tip: Top with shredded cheddar cheese and salsa for additional flavor.
