Fingerling Potato and Bacon Hash with Eggs

  • 1/2 lb
    Roasted Fingerling Potatoes, prepared and halved lengthwise
  • 1 cup
    Roasted Peppers and Onions (761), frozen
  • 1
    jalapeno pepper, seeded, deveined and chopped
  • 1 tsp
    Italian seasoning blend
  • Salt and pepper, to taste
  • 1/2 tsp
    chopped fresh parsley
  • 8-12
    large eggs, prepared to desired preparation


1. Sauté bacon in large skillet over medium heat until crisp.

2. Stir in potatoes, peppers and onions, jalapeno, and seasonings.

3. Cook 10-15 minutes or until the potatoes and peppers are heated through.

4. Top with prepared eggs, garnish with parsley and serve.

Tip: Top with shredded cheddar cheese and salsa for additional flavor.
