1. Preheat oven to 400° F.
2. Arrange stuffed shells in baking dish.
3. Sauté garlic, peppers, onions, zucchini, olives and mushrooms in oil over medium heat for 3 minutes.
4. Stir in broth, seasoning and tomatoes.
5. Pour mixture over roll ups and top with cheeses.
6. Cover loosely with foil and bake for 1 hour.
Tip; For a heartier version add diced chicken
