Grilled Tortellini with Roasted Peppers and Spinach

Ingredients

  • 1/2 bag
    Roasted Peppers and Onions (761), frozen
  • 2 Tbsp
    water
  • 2 Tbsp
    butter
  • 2 Tbsp
    olive oil
  • 1 tsp
    Italian seasoning
  • 1/2 tsp
    coarse salt and pepper
  • 4 cups
    fresh baby spinach
  • 1 cup
    cherry tomatoes, halved
  • 1/2 cup
    shredded Parmesan cheese

Instructions

1. Preheat grill to medium-high heat.

2. Place tortellini, peppers and onions in aluminum foil tray.

3. Top with water, butter, olive oil and sprinkle with Italian seasoning, salt and pepper.

4. Top pasta with spinach, cut tomatoes and Parmesan cheese.

5. Cover with foil, Seal edges and grill 25-30 minutes. Use a thermometer to ensure tray reaches 160°F.
