Tomato Balsamic Bruschetta

Garden fresh flavors on crisp toasted French bread.

Serve as an appetizer, snack or side.



  • 2 cups
    cherry tomatoes, cut into quarters
  • 1/4 cup
    chopped fresh basil
  • 1/2 cup
    shredded Parmesan cheese
  • 1 Tbsp
    minced garlic
  • 1 Tbsp
    balsamic vinegar
  • 4 Tbsp
    olive oil
  • Salt and pepper, to taste


1. Preheat oven to 375°F.

2. Mix together tomatoes, basil, cheese, garlic, vinegar, 2 tablespoon olive oil, salt and pepper. Cover and chill.

3. Slice French bread lengthwise and brush cut side with remaining olive oil.

4. Bake 8-10 minutes or until lightly browned.

5. Top with tomato mixture and cut into quarters.

Tip: Garnish with shaved Parmesan cheese and a pinch of chiffonade/shredded basil
