1. Preheat oven to 350° F.
2.Toast tortillas on both sides for 1-2 minutes on preheated grill or skillet.
3 Place first tortilla on baking sheet lightly sprayed with vegetable oil.
4. Top with chicken and 1/2 cup of cheese and cover with second tortilla.
5. Arrange peppers, onions and remaining cheese over tortilla. Top with last tortilla.
6. Bake 7-10 minutes or until cheese is melted.
7. Garnish with salsa and sour cream.
Tip: For a salad style entree, serve with lettuce, fresh diced tomato, black olives and chopped cilantro.
