Roasted Sweet Potato and Spinach Salad

Sweet potatoes are low in fat and loaded with vitamin A, fiber and potassium...essential nutrients.


  • 1/2 medium
    onion, thinly sliced
  • 1 tsp.
    olive oil
  • 1/2 small bag
    fresh baby spinach
  • 1 15.5 oz. can
    unsalted black beans, drained and rinsed
  • 1/3 cup
    light balsamic vinaigrette dressing
  • 1/4 cup
    pine nuts


1. Saute sweet potatoes with onions in a non-stick pan for 8-10 minutes over medium-high heat, according to package directions.

2. Add spinach and black beans. Continue to cook for an additional 4-6 minutes.

3. Drizzle with dressing and garnish with pine nuts.

Tip: Also excellent with garbanzo beans instead of black beans.
