Chicken and Wild Rice Salad with Mandarin Oranges

A great chicken salad entrée or side dish. Our fully cooked, skinless, diced chicken breast is wonderful when paired with a blend of seasoned white & wild rice, crunchy water chestnuts and celery, sweet mandarin oranges and a light balsamic vinaigrette dressing.

Ingredients

  • 1/2 cup
    mandarin oranges wedges, drained
  • 1/4 cup
    celery, diced
  • 1/2 cup
    water chestnuts, sliced
  • 2 cups
    rice pilaf, prepared and chilled
  • 1/2 cup
    balsamic vinaigrette dressing

Instructions

1. Mix together rice, chicken, water chestnuts, celery and oranges.
2. Stir in dressing. Cover and chill until ready to serve.
