Dijon Grilled Chicken with Salad

Grill up our boneless chicken as a highlight of a memorable mix-your-own salad bar! An excellent way to eat well at grill-outs.

Ingredients

  • 1/2 tsp.
    dried tarragon
  • 2 Tbsp.
    fresh lemon juice
  • 1 1/2 tsp.
    Worcestershire sauce
  • 1/4 cup
    Dijon mustard
  • Ground black pepper, to taste
  • 1 cup
    cherry tomatoes, halved
  • 1 7 oz. bag
    chopped romaine lettuce
  • Your choice of salad dressing

Instructions

Marinade:
1. Whisk together all ingredients (except for chicken, lettuce, tomatoes and salad dressing) until well-blended in a medium bowl.

2. Add chicken to bowl of marinade. Cover and refrigerate for 30 minutes.

3. Grill directly over medium heat for 10 to 12 minutes total, or until internal temperature reaches 170°F.

To assemble salad:
4. Slice chicken into strips and arrange over bed of lettuce. Top with your favorite dressing and garnish with halved cherry tomatoes.
