4 Pasta Shells Stuffed with Cheese (485)

1/4 cup olive oil
1 Tbsp minced garlic
1 cup Roasted Peppers and Onions (761), frozen

1 cup Mediterranean Vegetable Blend (848), frozen

1/2 cup Kalamata olives, pitted and halved
1 cup portabello mushrooms, cleaned and sliced
1/2 cup chicken broth
1 (14oz) can Italian style diced tomatoes
1/2 cup crumbled feta cheese

Steps

1. Preheat oven to 400° F.

2. Arrange stuffed shells in baking dish.

3. Sauté garlic, peppers, onions, zucchini, olives and mushrooms in oil over medium heat for 3 minutes.

4. Stir in broth, seasoning and tomatoes.

5. Pour mixture over roll ups and top with cheeses.

6. Cover loosely with foil and bake for 1 hour.

Tip; For a heartier version add diced chicken
