1. Place one cookie on the bottom of each bowl.
2. Top with two scoops ice cream.
3. Crumble 8 cookies and sprinkle over ice cream.
4. Sprinkle bacon over top then drizzle with caramel
5. Garnish with remaining ginger thin.
Tip: For entertaining ease, pre-scoop the ice cream and place on a cold plate or cookie sheet in the freezer
