1. Preheat oven to 400°F
2. Mix together thawed sauce from pouch and enchilada sauce.
3. Cover bottom of 9x13-inch casserole dish with rice.
4. Microwave tortillas for 30 seconds to soften and dip each tortilla into sauce.
5. Blend meat and vegetable mixture with ¾ cup of sauce and 1 cup cheese.
6. Fill each tortilla with mixture and place over rice.
7. Top with remaining sauce and cheese.
8. Bake for 25-30 minutes.
9. Garnish with salsa and green onions.
