1. Preheat oven to 375°F
2. Slice bread into 12 slices.
3. Lightly spray both sides with cooking oil then arrange on baking sheet.
4. Bake 10-12 minutes or until golden brown. Turn over half way through cooking time.
5. Blend together cream cheese, 2 Tbsp parsley, lemon and garlic until smooth. Divide and spread mixture over crostini.
6. Top with cocktail sauce and shrimp.
7. Garnish with remaining parsley leaf and red peppers.
