1. Sauté chicken, apples and onions in butter in a large skillet over medium-high heat for 8-10 minutes.
2. Stir in sweet potatoes and apple juice and continue to cook 6-8 minutes.
3. Top with raisins or dried cherries, if desired, and fresh herbs.
Tip: If you like a thicker sauce, mix the apple juice with about 2 tsp corn starch before cooking.
