A hearty meatless sauce plump with chunky colorful vegetables.


Ingredients and Steps


4 Lasagna Roll Ups (400), Micro-Bake prepared
1/2 cup chopped onion
1/2 cup chopped carrots
1/2 cup each sliced yellow squash and green zuccini
2 Tbps olive oil
1 medium Roma tomato, chopped
1 jar (24 oz) pasta sauce
1 cup grated Parmesan cheese


 1. Preheat oven to 400° F.

2. Sauté carrots, zucchini and onions in olive oil over medium-high heat 8-10 minutes.

3. Stir tomatoes and red sauce into vegetables.

4. Bake lasagna according to Micro-Bake cooking instructions and top with Pomodoro red sauce.

5. Garnish with Parmesan cheese before serving.

Tip: Add a pinch of brown sugar to the sauce. Goes great with the vegetables.
