What are marinades?

Marinades are a simple way to add a little extra pazzas and flavor to meats. They also tenderize. For tenderizing a marinade must contain an acid like lemon, lime juice or vinegar. Plan on marinating for about 30 minutes in the refrigerator to add flavor and 4 hours to overnight to tenderize.




1. Place meat in a shallow dish or 1-gallon plastic zip lock bag.
2. Add the marinade of your choice and refrigerate for at least 30 minutes or up to 12 hours.
3. Remove meat from marinade and pat dry before grilling or broiling.

Feisty Fajita-orange & lime juice, a little olive oil, some chopped garlic, chipotle chilli peppers in sauce, cilantro, a dash of cumin, salt and a spoon of brown sugar.

Spicy Asian-soy sauce, red wine or sake, a pince of chile flakes, some minced garlic and a little olive or sesame oil.

Beer Marinade-a can of beer, a spoon of brown sugar, a dash of Worchestershire sauce, a pinch of chili powder and some minced garlic to taste.

Ginger Rum-pineapple juice, a hint of run, some soy sauce, a spoon of brown sugar, minced garlic and ginger to taste. To add a little heat, add a pinch of red pepper.
