1. Sauté peppers and onions in olive oil over medium-high heat for 2-4 minutes.
2. Stir in prepared chicken bites, tortellini, spinach and tomatoes.
3. Cook an additional 4-6 minutes or until spinach wilts.
4. Sprinkle with herbs and pepper before serving.
Tip: Top with a light sprinkle of shredded Parmesan cheese. (optional)
