Steps
1. Preheat grill to medium-high.
2. Fill tortilla shells with coarsley chopped vegetables and top with shredded Cheddar or Taco cheese.
3. Brush filled tortilla shells with olive oil and grill over medium-high heat until golden on each side.
Tip: For meat lovers, add prepared fajita meat to quesadillas before grilling. Serve with a dipping sauce made with diced cucumber, yogurt and a little lemon juice
