Steps
1. Blend mango nectar, vinegar, ginger, brown sugar in a heavy saucepan and bring to a gentle boil. Simmer uncovered for 10-15 minute or until sauce is reduced in half.
2. Place salmon on a rack in a broiler pan. Brush salmon with olive oil and sprinkle with pepper.
3. Broil for 5 minutes. Brush fish with ½ of the mango sauce mixture. Broil about 3-5 minutes of until fish begins to flake.
4. Spoon remaining mango sauce over salmon before serving.
Tip: Also excellent on the grill.
