1. Preheat oven to 400oF.
2. Stir together desired amount of the seasoning packet and stewed tomatoes.
3. Place fish into a medium baking dish and pour seasoned tomato mixture over fish.
4. Add chopped peppers and onions if desired.
5. Bake for 20-22 minutes or until fish flakes and tomato sauce is bubbly and hot.
Tip: Add sliced peppers, onions around the outer edge of fish before baking.
