1. Saute rice pilaf and apricots in a non-stick pan over medium heat for 2-4 minutes.
2. Stir in apricot nectar or orange juice and cook an additional 4-6 minutes.
3. Top with cashews.
Tips: Also great with either diced fresh apples and golden raisens instead of the apricot.
