1. Slice pineapple in half lengthwise, removing and discarding the core. Carve a bowl out of the pineapple halves. Reserve 1 cup of medium-diced pineapple.
2. Heat oil in a large skillet over high heat.
3. Add garlic and ginger, stir until sizzling.
4. Mix in fried rice and shrimp.
5. Stir in sugar, soy, curry powder and green onion.
6. Toss with pineapple and serve in a pineapple halve or serving dish.
7. Garnish with cilantro and serve.
