Ingredients and Steps


1/2 bag Roasted Sweet Potatoes (774), frozen

1/2 medium onion, thinly sliced
1 tsp. olive oil
1/2 small bag fresh baby spinach
1 15.5 oz. can unsalted black beans, drained and rinsed
1/3 cup light balsamic vinaigrette dressing
1/4 cup pine nuts


1. Saute sweet potaotes and onions in a non-stick pan for 8-10 minutes over medium-high heat.

2. Add spinach and black beans. Continue to cook for an additional 4-6 minutes.

3. Drizzle with dressing and garnish with pine nuts.

Tips: Also excellent with garbanzo beans instead of black beans.
