1 cup milk
2 eggs
2/3 cup sugar
1 tsp ground nutmeg
1 1/2 tsp cinnamon
3 cups Roasted Sweet Potatoes (774), thawed

1/2 cup pecan pieces, toasted


1. Preheat oven to 350°.

2. Mix together milk, eggs, sugar, cinnamon and nutmeg in a blender or food processor.

3. Add sweet potatoes and blend until mixture is smooth.

4. Pour mixture into 9 x 9-inch casserole dish lightly sprayed with cooking oil.

5. Bake 45-50 minutes or until mixture has set.

6. Top with pecans and serve.
