This quick version of a layered dessert has the distintive flavors of tropical fruits, mint and moist pound cake that is a perfect finish to any meal.

1/4 cup Frozen Lemonade Concentrate (#724), thawed

1/8 tsp. ground ginger
1/8 tsp. cinnamon
4 drops mint extract
2 Tbsp. brown sugar
1 bag Golden Fruit Blend (803), thawed & drained

1 pkg. frozen pound cake, thawed & cut into 1/2" cubes
1 8 oz.container whipped topping, thawed
Fresh mint leaves

Steps

1. Combine together fruit blend, lemonade, brown sugar, ginger, cinnamon and mint extract in a large bowl and let sit for 10 minutes.

2. Place half of fruit into the bottom of large glass bowl and top with the pound cake.

3. Add whipped topping and remaining fruit. Garnish with fresh mint leaves.
