An Italian bread salad made with onions, tomatoes, basil, olive oil, vinegar and seasonings and chunks of bread. Some versions also include cucumbers, anchovies or peppers.

1/2 cup red onion, thinly sliced
1 pouch MicroSteam Whole Green Beans (790), prepared and cooled

1/2 cup basil, thinly sliced
1/2 cup red wine vinaigrette salad dressing
4 Tbsp. olive oil
1 cup cherry tomatoes, halved
2 loaves Multi Grain Loaf (627), thawed and diced

Steps

1. Cut green beans in halves or thirds.
2. Toss green beans, onion, basil and cherry tomatoes with red wine vinaigrette. Cover and let marinate.
3. Brown bread cubes with olive oil in a saute pan over medium heat for 3 to 4 minutes. Add browned bread cubes to salad and toss again. Serve immediately.
Tip: Red wine vinaigrette salad dressing can be substituted with Balsamic vinaigrette dressing.
