A guilt-free light yet luscious comforting casserole to serve as the main entree or as a potluck addition.


Ingredients and Steps


1 bag (6 oz) unseasoned bread stuffing
1/3 cup unsalted butter, melted
5 Premium Chicken Breast Filets (502), prepared & diced

1 can (10.75 oz) low fat, reduced sodium cream of mushroom soup
1 can (12 oz) fat free evaporated milk
3/4 cup fat free, reduced sodium chicken broth
1 1/2 cups Green Peas (766), frozen

1/4 cup diced onions
1/4 cup diced red pepper


1. Preheat oven to 350°F.

2. Prepare chicken breast according to package directions.  Cool and dice.

3. Mix stuffing and butter.  Spread half of the mixture into 13x9-inch baking pan.

4. Mix chicken, soup, milk, broth, peas, onions and peppers. Spread over stuffing. 

5. Top with remaining stuffing and butter mixture.

6. Bake 45-50 minutes.

Tip: If the casserole begins to get too dark, lightly cover with foil.
