Steps
1. Boil or sauté shrimp according to package directions. Meanwhile, prepare peas according to package directions. Cool in the refrigerator (about 20 minutes).
2. For dressing: combine apple juice, balsamic vinegar, honey, shallots and pepper (optional) in a small bowl and mix well.
3. Place shrimp, peas, celery, grapes, cucumber and walnuts in a medium-size bowl and add dressing. Stir to coat all ingredients.
