Make a special occasion sublime with this unique recipe for shrimp salad. To ensure a creamy salad, halve the cucumber and scoop out the seeds before chopping.


Ingredients and Steps


1 bag Jumbo Cooked Tail-On Shrimp (544)

2 cups Green Peas (766)

1 Tbsp. frozen apple juice concentrate
1/4 cup balsamic vinegar
2 Tbsp. honey
1 Tbsp. shallots, finely chopped
Cracked pepper to taste
1 cup celery, thinly sliced
1 cup red grapes, halved
1/2 cup walnuts
1/4 cup cucumber, coarsely chopped


1. Boil or sauté shrimp according to package directions. Meanwhile, prepare peas according to package directions. Cool in the refrigerator (about 20 minutes).

2. For dressing: combine apple juice, balsamic vinegar, honey, shallots and pepper (optional) in a small bowl and mix well.

3. Place shrimp, peas, celery, grapes, cucumber and walnuts in a medium-size bowl and add dressing. Stir to coat all ingredients.
