A wholesome nutritious chicken salad with lots of crunchy carrots, shredded slaw, sweet pineapple, nuts and a tangy yogurt dressing.


Ingredients and Steps


4 Premium Chicken Breast Filets (502), thawed

2 cups broccoli slaw or shredded cabbage
2 cups carrots, shredded
1 red pepper, thinly cut into 1 1/2" strips
1 8 oz. pineapple tidbits, drained
1/2 cup, fat-free plain yogurt
1 Tbsp. honey
1 Tbsp. white vinegar
1/4 cup poppy seed dressing
1/4 cup dry roasted cashews


1.  Prepare chicken according to package directions and cut into half-inch slices.

2.  Combine slaw, carrots, peppers, and pineapple.

3.  Make a dressing by mixing yogurt, vinegar, poppyseed dressing and honey.

4. Toss dressing with vegetables and top with sliced chicken and cashews.
