1. Saute carrots,chestnuts and garlic in olive oil over medium-high heat for 3-5 minutes
2. Break cooked crab cakes into chunks and add to sauted vegetables.
3. Add beaten eggs, soy sauce and pepper to the stir fry. Cook an additional for 6-8 minutes.
4. When eggs are about done, add beans sprouts and stir.
5. Wash lettuce with ice-cold water and pat dry with towel.
6. Scoop crab vegetable filling onto lettuce leaf and roll.
Tip: Serve with a grlic soy dipping sauce.
