This recipe was submitted by Mary Shrivers of Ada,OK who was a semi-finalist in our Wild About Salmon recipe contest. A tasty combination of salmon, pineapple, Mandarin oranges, celery and almonds gently stirred in mayonnaise. Enjoy alone or atop a bed of lettuce leaves.


Ingredients and Steps


2 fillets Wild-Caught Alaskan Salmon (559), frozen

1/4 tsp. pepper
1 11 oz. can Mandarin oranges, drained
1/2 tsp. sea salt
1 cup canned pineapple chunks, drained
1/2 cup celery, thinly sliced
1/2 cup slivered almonds
3/4 cup mayonnaise


1.  Sprinkle salmon with salt and pepper; prepare according to package directions. Flake salmon.

2.  Combine salmon, pineapple, Mandarin oranges, celery and almonds. Gently stir in mayonnaise.

3.  Refrigerate 2-3 hours before serving.
