Versatile pierogies are the foundation of this zesty Tex-Mex-style entrée. Garnish with cilantro, tomatoes, and lime juice.


Ingredients and Steps


1 tbsp. green chilies, chopped
1/4 cup red pepper, chopped
1 15 oz. can black beans, drained & rinsed
12 Pierogies (778), frozen

1/2 cup tomatoes, chopped
2 Tbsp. lime juice
1 1/2 tsp. ground cumin
1/4 cup cilantro, chopped
2 cloves garlic, chopped
1/4 cup onion, chopped
1 Tbsp. olive oil
Salt & pepper to taste


1. Prepare pierogies according to package directions.

2. Sauté garlic, onion, pepper and green chilies in pan with olive oil. Add beans during the last minute of sautéing. Sprinkle with salt and pepper (to taste) and add cumin; stir well.

3. Serve over pierogies and garnish with cilantro, tomatoes and lime juice.
