When we say this recipe is "spicy," we mean it's spiced "just right." Both kids and adults alike will enjoy the zesty hint of lemon—a perfect complement to the chicken and vegetables.


Ingredients and Steps


1 pkg. Roasted Chicken Drumsticks (#509), thawed
2 cups carrots, thinly sliced
1/2 cup Pimento stuffed olives
2 cups yellow onion, sliced
1 fresh jalapeno pepper, seeded and finely chopped
2 Tbsp. oil
1/2 tsp. ground black pepper
1/3 cup lemon juice
1 Tbsp. Dijon mustard
1 tsp. salt


1.  In a large sauce pot set over high heat, add the oil.

2. Add onion and jalapeno pepper and saute until well browned.

3. Add salt, pepper and carrot and cook for 3-4 minutes.

4. Add chicken broth, dijon mustard and lemon juice to simmer for 5 minutes.

5. Add chicken into the sauce to simmer in medium low heat for 20-25 minutes.

6. Add olives when ready to serve.
