Steps
1. In a large sauce pot set over high heat, add the oil.
2. Add onion and jalapeno pepper and saute until well browned.
3. Add salt, pepper and carrot and cook for 3-4 minutes.
4. Add chicken broth, dijon mustard and lemon juice to simmer for 5 minutes.
5. Add chicken into the sauce to simmer in medium low heat for 20-25 minutes.
6. Add olives when ready to serve.
