1. In a medium bowl, whisk together all ingredients (except for chicken, lettuce, tomatoes and salad dressing) until well-blended.
2. Add chicken to bowl of marinade. Cover and refrigerate for 30 minutes.
3. Grill directly over medium heat for 10 to 12 minutes total, or until internal temperature reaches 170°F.
To assemble salad:
4. Slice chicken into strips and arrange over bed of lettuce. Top with your favorite dressing and garnish with halved cherry tomatoes.
