A satisfying, easy to make stir fry for those last minute meals.



Ingredients and Steps


2 Tbsp vegetable oil
12 Asparagus Spears (781) partially thawed & cut into 1" pieces

1 Tbsp. minced garlic
1 cup Roasted Peppers and Onions (761), prepared

1 cup sliced mushrooms
1/2 pkg. Diced Chicken Breast Meat (514), frozen

3 cups prepared brown rice
1/4 cup dried cranberries
1/2 cup chicken broth
1 tsp. cornstarch
1 Tbsp teriyaki or soy sauce
1/4 cup cashew halves (optional)


1.  Heat vegetable oil in a large skillet until hot.

2.  Sauté asparagus, garlic, mushrooms, peppers and onions for 3-5 minutes.

3. Stir in chicken, rice and cranberries.  Sauté an additional 5-7 minutes.

3.  Combine cornstarch, teriyaki (or soy) sauce and chicken broth.

4. Stir mixture into stir fry and cook until thickened.

Tip: Also great as a side dish without the chicken.
